[MATHEDCC] Intermediate Algebra Problems

My school recently updated our intermediate algebra course... somewhat
less emphasis on skills, but more on function cocepts and graphing.
It's the "gateway" course our students must pass in order to go on to a
math course that earns them college credit.

I would like to occasionally give my students some "big" problems,
applications-based, that require more than a couple of minutes and 2 or
3 steps to do. I'm aware of plenty of such problems at the pre-calculus
and calculus levels, but none come to mind for intermediate algebra.
I'm looking for somewhat non-standard problems that might be assigned as
take-home projects, but are still appropriate to the course level. Can
anyone point me in some promising directions? Thanks in advance.
